I hanker for a hunk of cheese!

One of my favorite foods is cheese. There are so many varieties to choose from.

This past week, I purchased a ball of fresh Mozzarella cheese, and a small "cake" of wax-coated Wensleydale. At dinner this evening, I had a salad with goat cheese crumbles sprinkled on top of it. On Tuesday night, Modern Marvels (on the History Channel) talked about cheesemaking through the ages.

One of my favorite dishes is a salad with Italian dressing and Gorgonzola cheese crumbles. I also love cheese on crackers, with some wine.

I know that cheese has lots of salt and fat. But it's the fat that gives it the flavor. Among other things. And it's one of the things I'd have to cut back on or eliminate if I were to go on a diet. :(

What are your favorite varieties of cheese? What can I try next?

A nice swiss. Nutty and firm with a lot of flavor.
None of this baby swiss nonsense. No texture and nowhere near enough flavor.

And, yeah. It's got a lot of fat and salt. But properly used it adds a lot of flavor and interest to foods. You don't have to cut things out altogether. Just learn how to use them properly. A little can go a long way.

"Time for Timer" I love aged asiago sliced thin or shaved on a salad or slightly melted over a well seasoned,properly cooked surloin burger. It's not as fatty because it's a hard cheese but it's nutty and salty with a bit of a bite that lets me know I'm indulging in a good cheese.

The last time I visited Em we shared a salad at a restaurant that had cheese sticks as an accompaniment and the cheese in it was fantastic. I've already forgotten the name of it. It was a goat cheese--fabulous.

I like very sharp cheddars, bleu cheese crumbles, good brie, fresh mozzarella, asiago. I like just about any kind of cheese, but in small amounts.

Oh I am interested in what people are saying here, as I love cheese and always am in the mood to try something new. Have you ever tried Havarti? yummy!


BTW, sorry about last night on the phone... I had 3 people trying to talk to me at once and I was getting flustered at everyone (an issue of mine, I cannot talk to more than one person at a time or I go bonkers.. ever since I was a kid)
Basically I was down in cincy with N and her friend going thrift shopping.
